I have been looking for healthy recipes to eat that actually taste good and sort of hit my taste fancy. This is one that I came up with last night that I think is a keeper. I used Quinoa this morning and Hearts of Romaine last night to reduce the Carbs but any rice could be used just as effectively.

Quinoa or Hearts of Romaine
Craisins
Spinach
Olives (I used Greek)
soft boiled egg
sugar snap peas
Balsamic Vinegarette
Extra Virgin First Press Olive Oil

Cook the Quinoa. Then in a separate bowl mix in all but the egg together. Throw together with Quinoa or load up on Hearts of Romaine... put the egg on top to make it look pretty! Add any fresh herbs you might like the flavor of. Enjoy!

It was easy to make, and when you just stop and taste it, the layers surprised me. If you enjoyed it let me know!
